Tacos de Barbacoa

Barbecue Tacos

Ingredients:
1 kilo of beef pulp
4 bay leaves
½ onions
Salt, to taste
1 kilo of tomatoes, cooked
1 clove of garlic
6 black peppers
6 cloves
Vegetable oil
1 kilo of hot corn tortillas
1 onion, finely chopped
1 Lemon

Preparation:
Cook the meat in a large pot with water, 2 bay leaves, ½ onion and salt, until meat is tender, about 2 hours.

Take out the cooked meat and slice thin. Reserve the broth.
Separately, cook the tomatoes in water with garlic, 2 bay leaves, peppers and cloves. This makes your sause.

Heat the oil over low heat and sauté the sauce for 15 minutes.

Add the shredded beef and let it boil for another 10 minutes.

Add 2 or 3 cups of the meat broth to make the mixture juicy.
Soak the tortillas in the red sauce and fill with meat. Roll and serve with sprinkled onion and lemon droplets.
Accompany with Chinese beans and Pico sauce to your liking.

1 kilo de pulpa de res
4 hojas de laurel
½ cebollas
Sal, al gusto
1 kilo de jitomates, cocidos
1 diente de ajo
6 pimientas negras
6 clavos
Aceite vegetal
1 kilo de tortillas de maíz calientes
1 cebolla, finamente picada
1 limón

Modo de Preparación:

Cuece la carne en una olla grande con agua 2 hojas de laurel, ½ cebolla y sal, hasta que quede bien suave, aproximadamente 2 horas. Deshebra la carne cocida y reserva el caldo.
Aparte, cuece los jitomates con agua y licúalos con ajo, 2 hojas de laurel, pimientas y clavos. Calienta el aceite a fuego suave y sofríe la salsa durante 15 minutos. Agrega la carne deshebrada y deja que hierva durante otros 10 minutos. Agrega 2 o 3 tazas del caldo de la carne para que el guiso quede jugoso.
Remoja las tortillas en la salsa roja y rellénalas de carne. Enróllalas y sírvelas espolvoreadas con cebolla picada y gotitas de limón.
Acompaña con frijoles chinitos y con salsa picosa a tu gusto.
